Potato Starch has been extracted from potatoes and turned into a fine, powdered form. This starch is used as a thickener for sauces, soups, stews, gravies and other similar recipes. It has similar thickening properties to cornstarch but the advantage of this product is that it can handle higher temperatures than cornstarch when used as a thickener.
Another benefit to this starch is that it is gluten free. You can still have a nice thick gravy without the use of flour. Using potato starch to thicken sauces and gravies is also ideal because it can help the sauces remain clear, while flour creates a more muddied, darker appearance.
Add this product to cupcakes, cakes, and other baked goods when you want to reduce the amount of butter you are using for baking.
Please note that potato starch is not potato flour.
