Coarse Kosher salt is salt without any additives. This version is coarse, which means the grains are larger than table salt that you may normally use. Kosher salt is used in Jewish communities in preparing meat. Also, some chefs prefer its flavor and texture over table salt. It can be used in pickling but is not well-suited to baking. This coarse size and shape allows it to absorb more moisture than other forms of salt, and this makes kosher salt excellent for curing meats. Like other coarse salts, kosher salt can be used in recipes that call for a salt crust. You can even use it to salt the edge of a margarita glass and as a topping on your pretzels. It is also a nice topping in whole grain loaves and on meat, poultry or baked potatoes. If you have a French recipe calling for “gros sel” something of this nature is what is intended. This is great for using this salt to make pickled lemons, which are very useful in Mediterranean dishes. Also try our coarse kosher salt on tomatoes and celery.
