Xanthan Gum is made by fermenting corn sugar with a bacteria, then the mixture is dried up and made into a fine powder. As an emulsifier, it helps ingredients stay blended more effectively and for a longer period of time. As a thickener, it will help add thickness and a more sticky texture to other liquids. In works great in pastry fillings, by helping water from seeping out and soaking through the dough. Xanthan gum is a popular ingredient in ice cream because it helps to retain the smooth texture. It can be used in sauces as a substitute for cream, butter or eggs and provides the necessary richness and depth.
It is vegan and great for cooking and baking if you have certain food allergies and restrictions.
It can also be mixed with guar gum for greater viscosity.
