My absolute favorite Thanksgiving food is pumpkin pie.  I love pumpkin pie with homemade whipped cream after our Thanksgiving feast.  I usually make 1 – 2 more additional pies than probably needed, just to make sure there are leftovers for the next day. I should not admit this, but I eat it for breakfast the day after Thanksgiving.  One of life’s true guilty pleasures is coffee and a slice of delicious pumpkin pie in the morning.  If you have never done this you must try it sometime.

However, the true secret to a great pumpkin pie is the perfect combination of spices.  If your spice mixture is not just right your pie will taste all wrong.  It will have too much cinnamon flavor or sometimes if the spice mixture incorrect or not as potent because it is old, it can taste somewhat bitter.
