Rocky Mountain Herb Crusted Chicken Breast

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons Rocky Mountain Herb blend
  • 1 teaspoon lemon zest
  • Fresh parsley, for garnish
  • 1 lemon, sliced

Instructions:

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare Herb Blend: In a small bowl, mix Rocky Mountain Herb Blend and olive oil to create a herb paste.

Prepare Chicken: Place the chicken breasts on a cutting board and pat them dry with paper towels. Season both sides of the chicken with salt and pepper. Then, generously spread the herb paste over each chicken breast, covering them evenly.

Assemble: Arrange the lemon slices on the bottom of a baking dish to create a bed for the chicken. Place the herb-crusted chicken breasts on top of the lemon slices.

Roast: Place the baking dish in the preheated oven and roast for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).

Serve: Once the chicken is cooked, remove it from the oven and serve with your favorite side dish. This also pairs beautifully with our favorite side dish: Herbes de Provence Roasted Potatoes!

Herbes de Provence Roasted New Potatoes

Using our Herbs de Provence blend, which can be used in a lot of Mediterranean dishes to create an aromatic and vibrant flavor pallet, elevate this side dish featuring new potatoes.

Ingredients:

  • 1 ½ pounds new potatoes, washed and halved
  • 2 tablespoons olive oil
  • 2 teaspoons Herbes de Provence
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare Potatoes: In a large mixing bowl, toss the halved new potatoes with olive oil, minced garlic, Herbes de Provence, salt, and pepper until evenly coated.

Roast Potatoes: Transfer the seasoned potatoes onto a baking sheet lined with parchment paper, arranging them in a single layer. Roast in the preheated oven for 25-30 minutes, or until the potatoes are tender and golden brown, tossing halfway through to ensure even cooking.

Serve: Once the potatoes are roasted to perfection, remove them from the oven and transfer them to a serving dish. Garnish with freshly chopped parsley for a pop of color and extra flavor.
