This ancho powder comes from a chile that is considered to be one of the “Holy Trinity” of Mexican chiles. The three chiles included in the trinity are the Mulato Chile, Ancho Chile, and Padilla Chile. Ancho is a dried Poblano, a mild chili pepper that originated in Puebla, Mexico. The drying process gives the chile sweet and mild fruit flavors of dried plum and raisin with tones of coffee, licorice, and tobacco. Use this powder in sauces and moles.
